Crisp romaine lettuce tossed in a tangy, creamy homemade Caesar dressing with crunchy croutons and parmesan.

Ingredients

Serves:4
  • 2 heads romaine lettuce
  • 0.5 cup parmesan (shaved)
  • 2 cups bread (cubed, for croutons)
  • 2 cloves garlic cloves
  • 4 fillets anchovy fillets
  • 1 large egg yolk
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 0.5 cup olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Steps

  1. 1Toss bread cubes with 2 tbsp olive oil and a pinch of salt. Bake at 190 °C (375 °F) for 10-12 min until golden. Set aside.
  2. 2Mash anchovy fillets and garlic into a paste (or use a food processor).
  3. 3Whisk in egg yolk, lemon juice, Dijon mustard, and Worcestershire sauce.
  4. 4Slowly drizzle in remaining olive oil while whisking to emulsify.
  5. 5Season dressing with salt and pepper.
  6. 6Tear or chop romaine into bite-size pieces. Toss with dressing.
  7. 7Top with croutons and shaved parmesan. Serve immediately.
