Argentina's vibrant herb sauce — flat-leaf parsley, garlic, red chili, and oregano in olive oil and red wine vinegar. The ultimate steak companion.

Ingredients

Serves:8
  • 40 g fresh flat-leaf parsley
  • 4 pieces garlic cloves
  • 5 g fresh oregano
  • 0.5 tsp red chili flakes
  • 3 tbsp red wine vinegar
  • 120 ml extra virgin olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Steps

  1. 1Finely chop the parsley, fresh oregano, and garlic by hand (do not use a blender — the texture should be chunky).
  2. 2Combine chopped herbs and garlic in a bowl.
  3. 3Add red chili flakes, red wine vinegar, salt, and pepper, and stir to combine.
  4. 4Pour in the olive oil and mix well.
  5. 5Let rest at room temperature for at least 30 minutes before serving so the flavours develop. Use within 3 days.
