Easter Banitsa with Spring Onion

A spring banitsa loaded with feta, eggs and fresh spring onions – a seasonal twist on the Bulgarian Easter morning pastry.

Ingredients

Serves:8
  • 500 g filo pastry sheets
  • 5 pcs eggs
  • 400 g feta cheese
  • 4 stalks spring onion
  • 80 g melted butter
  • 200 ml yoghurt
  • 0.5 tsp bicarbonate of soda

Steps

  1. 1Beat eggs with crumbled feta, yoghurt and spring onion.
  2. 2Stir in bicarbonate of soda.
  3. 3Butter a baking tray.
  4. 4Layer buttered filo sheets with filling alternately.
  5. 5Drizzle remaining butter over the top.
  6. 6Bake at 200°C for 30–35 minutes until crisp and golden.
