A light and zesty lemon cake with a glossy lemon glaze – the perfect refreshing Easter dessert after a rich feast.

Ingredients

Serves:10
  • 250 g flour
  • 200 g sugar
  • 120 g butter
  • 3 pcs eggs
  • 120 ml milk
  • 1 sachet baking powder
  • 2 pcs lemon zest
  • 4 tbsp lemon juice
  • 150 g icing sugar

Steps

  1. 1Beat softened butter with sugar until pale and fluffy.
  2. 2Add eggs one at a time, beating after each.
  3. 3Fold in flour and baking powder alternately with milk.
  4. 4Stir in lemon zest.
  5. 5Pour into a greased and floured tin; bake at 175°C for 30–35 minutes.
  6. 6Whisk lemon juice with icing sugar for the glaze.
  7. 7Drizzle over the warm cake.
