A Bulgarian classic – poached eggs nestled in a pool of garlicky yoghurt, drizzled with red-pepper butter. Eggs at their finest.

- 4 pcs eggs
- 400 g thick yoghurt
- 40 g butter
- 1 tsp paprika
- 2 cloves garlic
- 1 tbsp vinegar
- to taste salt

- 1Bring water with vinegar to a gentle simmer.
- 2Poach eggs one at a time for 3–4 minutes.
- 3Mix yoghurt with crushed garlic and salt.
- 4Spread yoghurt in shallow bowls; add eggs.
- 5Melt butter with paprika until fragrant.
- 6Drizzle red butter over the eggs and serve immediately.
