Quick and versatile egg fried rice packed with vegetables and seasoned with soy sauce and sesame oil.

Ingredients

Serves:4
  • 4 cups cooked rice (day-old preferred)
  • 3 large eggs
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 cup frozen peas and carrots
  • 3 stalks green onions (sliced)
  • 2 cloves garlic cloves (minced)
  • 2 tbsp vegetable oil
  • 0.25 tsp white pepper

Steps

  1. 1Heat vegetable oil in a wok or large skillet over high heat.
  2. 2Add peas and carrots; stir-fry 2 minutes.
  3. 3Push vegetables to the side, add beaten eggs, scramble until set, then break into small pieces.
  4. 4Add day-old rice, breaking up any clumps. Toss and fry 3-4 min until heated through.
  5. 5Drizzle soy sauce and sesame oil over rice, tossing continuously.
  6. 6Add garlic and white pepper; stir-fry 30 seconds.
  7. 7Garnish with sliced green onions and serve.
