A bright, refreshing salad of crisp vegetables, tangy feta, and kalamata olives in a lemon-oregano dressing.

Ingredients

Serves:4
  • 1 large cucumber
  • 3 medium tomatoes
  • 0.5 medium red onion
  • 1 medium green bell pepper
  • 200 g feta cheese (block, cubed)
  • 0.5 cup kalamata olives
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp salt

Steps

  1. 1Cut cucumber and tomatoes into chunks. Slice red onion into thin rings. Dice bell pepper.
  2. 2Combine vegetables in a large bowl.
  3. 3Add kalamata olives and cubed feta on top (do not toss yet).
  4. 4Whisk together olive oil, red wine vinegar, lemon juice, oregano, and salt.
  5. 5Drizzle dressing over the salad.
  6. 6Toss gently just before serving so feta stays in large pieces.
