A bright, refreshing salad of crisp vegetables, tangy feta, and kalamata olives in a lemon-oregano dressing.

- 1 large cucumber
- 3 medium tomatoes
- 0.5 medium red onion
- 1 medium green bell pepper
- 200 g feta cheese (block, cubed)
- 0.5 cup kalamata olives
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 0.5 tsp salt
Steps
- 1Cut cucumber and tomatoes into chunks. Slice red onion into thin rings. Dice bell pepper.
- 2Combine vegetables in a large bowl.
- 3Add kalamata olives and cubed feta on top (do not toss yet).
- 4Whisk together olive oil, red wine vinegar, lemon juice, oregano, and salt.
- 5Drizzle dressing over the salad.
- 6Toss gently just before serving so feta stays in large pieces.
