The quintessential Bulgarian Easter sweet bread – soft, enriched with eggs and butter, beautifully braided and golden.

- 600 g flour
- 150 g sugar
- 100 g butter
- 3 pcs eggs
- 200 ml warm milk
- 7 g dry yeast
- 1 pc lemon zest
- 1 tsp vanilla
- 80 g raisins

- 1Activate yeast in warm milk with 1 tbsp sugar; let foam.
- 2Beat eggs with remaining sugar and softened butter.
- 3Mix flour with vanilla and lemon zest; combine with egg mixture and yeast.
- 4Knead into a soft dough; rise 1.5 hours.
- 5Fold in raisins, divide and braid or twist.
- 6Place in greased pans; rise 30 minutes, then bake at 170°C for 40 minutes.
- 7Cool on a rack before slicing.
