Lamb slow-roasted in a clay pot with burst cherry tomatoes, garlic and rosemary – fragrant, juicy and stunningly simple.

- 1 kg lamb leg or shoulder
- 300 g cherry tomatoes
- 6 cloves garlic
- 2 sprigs rosemary
- 1 tsp thyme
- 3 tbsp olive oil
- 200 ml white wine
- to taste salt and pepper

- 1Stud the lamb with garlic and rosemary.
- 2Rub with spices and olive oil.
- 3Place in a clay pot with the wine.
- 4Scatter cherry tomatoes around the meat.
- 5Cover and roast at 160°C for 3 hours.
- 6Uncover for the last 20 minutes to caramelise.
- 7Serve in the pot.
