Creamy and aromatic lamb liver pâté with herbs – a delicious Easter appetiser spread on toasted bread slices.

- 400 g lamb liver
- 80 g butter
- 1 pc onion
- 2 cloves garlic
- 50 ml white wine
- 0.5 tsp thyme
- to taste salt and pepper
- 1 bunch parsley

- 1Clean and slice the liver.
- 2Melt half the butter, sweat onion and garlic.
- 3Add the liver and cook 5–7 minutes.
- 4Deglaze with wine and cook off.
- 5Blend all ingredients with remaining butter, thyme and parsley until smooth.
- 6Season, pack into ramekins and chill 2 hours.
- 7Serve with toast.
