Lamb with Nettles

A traditional Bulgarian spring dish of tender lamb braised with fresh nettles and an egg-yoghurt sauce – as seasonal as it gets.

Ingredients

Serves:4
  • 600 g lamb pieces
  • 400 g nettles (blanched)
  • 2 pcs onion
  • 40 g butter
  • 2 pcs eggs
  • 200 ml yoghurt
  • 1 tbsp flour
  • to taste salt

Steps

  1. 1Brown the lamb in butter with onion.
  2. 2Add blanched and chopped nettles.
  3. 3Add water to cover and simmer 45 minutes.
  4. 4Whisk eggs with yoghurt and flour.
  5. 5Temper with hot broth and stir into the pot.
  6. 6Cook gently 5 minutes more and serve.
