The classic cold condiment for fish and seafood — creamy mayo, briny capers, pickled gherkins, and fresh herbs combined into a sharp, tangy dip.

Ingredients

Serves:6
  • 180 ml mayonnaise
  • 3 pieces pickled gherkins
  • 1 tbsp capers
  • 1 tbsp fresh dill
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Steps

  1. 1Finely chop the gherkins and capers. Finely chop the dill.
  2. 2Combine mayonnaise, chopped gherkins, capers, and dill in a bowl.
  3. 3Add lemon juice, Dijon mustard, salt, and pepper. Stir to combine.
  4. 4Taste and adjust — more lemon for acidity, more capers for brininess.
  5. 5Refrigerate for 30 minutes before serving. Keeps in the fridge for 5 days.
