The cooling Greek yoghurt dip with cucumber, garlic, and dill. A perfect counterpoint to grilled meats and warm pita — minimal effort, maximum flavour.

Ingredients

Serves:6
  • 500 g Greek yoghurt (full fat)
  • 1 piece cucumber
  • 2 pieces garlic cloves
  • 10 g fresh dill
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp salt
  • 1 pinch white pepper

Steps

  1. 1Grate the cucumber on a coarse grater. Place in a clean cloth or sieve, sprinkle with a pinch of salt, and squeeze out as much moisture as possible.
  2. 2Mince the garlic very finely or grate it.
  3. 3Combine yoghurt, drained cucumber, garlic, olive oil, and lemon juice in a bowl.
  4. 4Fold in the chopped fresh dill. Season with salt and white pepper.
  5. 5Refrigerate for at least 30 minutes before serving to allow the flavours to meld.
