A uniquely Bulgarian Easter dish – lamb offal mixed with rice and dill, wrapped in caul fat and roasted to a crisp golden finish.

- 800 g lamb offal (liver, heart, lungs)
- 100 g rice
- 2 pcs onion
- 1 bunch dill
- 50 g butter
- 2 pcs eggs
- 1 pc caul fat (lamb net)
- to taste salt and pepper

- 1Dice offal finely and sear in butter.
- 2Add chopped onion and rice; sauté 5 minutes.
- 3Remove from heat; mix in dill and beaten eggs.
- 4Season generously.
- 5Lay caul fat in a roasting tin; spoon filling in the centre.
- 6Wrap tightly with the caul fat.
- 7Roast at 180°C for 60–70 minutes until golden brown.
