The Roman original — butter and Parmesan emulsified with starchy pasta water into a glossy, indulgent cream without a drop of actual cream.

Ingredients

Serves:4
  • 100 g unsalted butter
  • 120 g Parmesan cheese
  • 120 ml pasta cooking water
  • 1 tsp black pepper
  • 0.5 tsp salt

Steps

  1. 1Finely grate the Parmesan and bring it to room temperature.
  2. 2Cook pasta until al dente and reserve 1 cup of the starchy cooking water before draining.
  3. 3In the warm pasta pot (off heat), melt butter gently.
  4. 4Add drained pasta and half the pasta water. Toss vigorously for 1 minute.
  5. 5Add Parmesan in three batches, tossing and adding more pasta water as needed to create a glossy emulsified sauce. Season with salt and plenty of black pepper.
