A hearty, slow-simmered stew with tender beef chunks, potatoes, carrots, and a rich savoury gravy.

- 700 g beef chuck (cubed)
- 3 medium potatoes (cubed)
- 3 medium carrots (sliced)
- 1 large onion (diced)
- 2 stalks celery stalks (sliced)
- 3 cloves garlic cloves (minced)
- 3 cups beef broth
- 2 tbsp tomato paste
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 leaf bay leaf
- 1.5 tsp salt
- 0.5 tsp black pepper
Steps
- 1Pat beef cubes dry and season with salt, pepper, and flour.
- 2Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches (3-4 min per batch). Remove and set aside.
- 3Sauté onion, celery, and garlic in the same pot until softened (3 min).
- 4Stir in tomato paste and cook 1 minute.
- 5Add beef broth, Worcestershire sauce, thyme, and bay leaf. Return beef to pot.
- 6Bring to a boil, then reduce to low. Cover and simmer 1 hour.
- 7Add potatoes and carrots. Continue simmering 30-40 min until vegetables are tender.
- 8Discard bay leaf. Adjust seasoning and serve.
