Chicken Stir-Fry

Tender chicken and crisp vegetables tossed in a savoury soy-ginger sauce. Ready in under 20 minutes.

Ingredients

Serves:4
  • 500 g chicken breast (sliced)
  • 2 cups broccoli florets
  • 1 medium bell pepper (sliced)
  • 1 medium carrot (julienned)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp fresh ginger (grated)
  • 2 cloves garlic cloves (minced)
  • 2 tbsp vegetable oil
  • 1 tbsp honey
  • 1 tbsp rice vinegar

Steps

  1. 1Mix soy sauce, sesame oil, honey, rice vinegar, and cornstarch in a small bowl. Set sauce aside.
  2. 2Heat vegetable oil in a wok or large skillet over high heat.
  3. 3Stir-fry chicken pieces until cooked through (4-5 min). Remove and set aside.
  4. 4Add broccoli, bell pepper, and carrot to the wok. Stir-fry 3-4 min until crisp-tender.
  5. 5Add ginger and garlic, cook 30 seconds until fragrant.
  6. 6Return chicken to the wok. Pour sauce over everything and toss until thickened (1-2 min).
  7. 7Serve over steamed rice.
