Soft and chewy chocolate chip cookies made with coconut oil instead of butter. Completely dairy-free and so good you will never miss the original.

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup coconut oil, melted
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 1.5 cups dairy-free chocolate chips

- 1Preheat the oven to 175C and line two baking sheets with parchment paper.
- 2Whisk together flour, baking soda, and salt in a bowl.
- 3Beat melted coconut oil with both sugars until combined. Add eggs and vanilla extract and mix well.
- 4Fold the flour mixture into the wet ingredients until just combined, then fold in the chocolate chips.
- 5Scoop tablespoon-sized balls onto prepared baking sheets, spacing 5 cm apart.
- 6Bake for 10 to 12 minutes until the edges are golden. Cool on the sheet for 5 minutes before transferring.
