Kulich (Orthodox Easter Bread)

The tall cylindrical Russian Orthodox Easter bread – light, enriched with butter and eggs, studded with raisins and crowned with white icing.

Ingredients

Serves:12
  • 700 g flour
  • 200 g sugar
  • 200 g butter
  • 4 pcs eggs
  • 200 ml warm milk
  • 11 g dry yeast
  • 1 tsp vanilla
  • 100 g raisins
  • 50 g candied fruit
  • 200 g icing sugar

Steps

  1. 1Activate yeast in warm milk with 1 tbsp sugar.
  2. 2Beat eggs with remaining sugar and softened butter.
  3. 3Mix flour with vanilla; combine with egg mixture and yeast.
  4. 4Knead smooth dough; rise 2 hours.
  5. 5Fold in raisins and candied fruit.
  6. 6Fill cylindrical moulds one-third full; let rise again.
  7. 7Bake at 170°C for 45–50 minutes.
  8. 8Decorate with a white icing sugar glaze.
