A slowly baked lamb and sauerkraut layered casserole with rice and spiced sausage – an old Bulgarian Easter dish of extraordinary depth.

- 700 g lamb
- 500 g sauerkraut
- 200 g sausage
- 2 pcs onion
- 100 g rice
- 1 tsp paprika
- 40 g butter
- to taste salt and pepper

- 1Brown the lamb in butter.
- 2Slice onion and sauage; sauté in butter.
- 3Rinse and shred the sauerkraut.
- 4Layer sauerkraut, lamb, sausage and rice in a clay pot.
- 5Season and sprinkle paprika.
- 6Seal with a lid; bake at 160°C for 2.5–3 hours.
- 7Serve directly from the pot.
