A smooth, buttery lamb liver mousse – a rich and festive Easter starter served on toast with cornichons.

- 400 g lamb liver
- 80 g butter
- 1 pc onion
- 2 cloves garlic
- 50 ml white wine
- 0.5 tsp thyme
- to taste salt and pepper
- 1 bunch parsley

- 1Clean and slice the liver.
- 2Melt half the butter; sweat onion and garlic 3 minutes.
- 3Add liver and coook 5–7 minutes.
- 4Deglaze with wine; cook off the alcohol.
- 5Blend with remaining butter, thyme and parsley until silky.
- 6Season, pack into ramekins and chill 2 hours.
- 7Serve with sourdough toast and cornichons.
