Lamb with Nettles and Rice

A Rhodope Mountain speciality – lamb braised with spring nettles and rice, finished with a yoghurt and egg sauce. Pure seasonal flavour.

Ingredients

Serves:4
  • 600 g lamb pieces
  • 300 g nettles (blanched)
  • 120 g rice
  • 2 pcs onion
  • 40 g butter
  • 300 ml yoghurt
  • 2 pcs eggs
  • to taste salt and pepper

Steps

  1. 1Brown lamb in butter with onion.
  2. 2Add chopped blanched nettles and rice.
  3. 3Cover with water; season and simmer 40 minutes.
  4. 4Beat eggs with yoghurt, temper with hot broth and stir into the pot.
  5. 5Cook gently 5 minutes more and serve.
