The foundation of Italian-American cooking — crushed tomatoes, garlic, and fresh basil simmered into a deeply flavourful red sauce. Ready in 30 minutes.

Ingredients

Serves:4
  • 800 g crushed San Marzano tomatoes
  • 4 pieces garlic cloves
  • 3 tbsp extra virgin olive oil
  • 10 g fresh basil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 pinch sugar
  • 0.5 tsp dried oregano

Steps

  1. 1Heat olive oil in a saucepan over medium heat. Crush the garlic cloves and cook for 1–2 minutes until fragrant but not browned.
  2. 2Add the crushed tomatoes and stir to combine. Season with salt, pepper, oregano, and a pinch of sugar.
  3. 3Simmer uncovered on low heat for 20–25 minutes, stirring occasionally, until the sauce thickens.
  4. 4Remove from heat and stir in fresh basil. Taste and adjust seasoning.
  5. 5Use immediately or store in the fridge for up to 5 days.
