Protein-packed quinoa with cucumber, tomatoes, olives, feta, and a lemon-herb dressing.

- 200 g quinoa
- 1 cucumber
- 200 g cherry tomatoes
- 80 g Kalamata olives
- 100 g feta cheese
- 0.5 red onion
- 30 g fresh parsley
- 3 tbsp lemon juice
- 3 tbsp olive oil
- 1 clove garlic
Steps
- 1Cook quinoa in 400ml salted water for 12 minutes. Fluff and let cool.
- 2Dice cucumber, halve tomatoes, and thinly slice red onion.
- 3Whisk lemon juice, olive oil, and minced garlic for the dressing.
- 4Combine cooled quinoa with all vegetables and olives.
- 5Crumble feta on top.
- 6Toss with dressing and fresh parsley. Refrigerate 20 minutes before serving.
