A vibrant green spring soup made from fresh nettles – a medicinal, seasonal Easter tradition from the Bulgarian countryside.

- 400 g nettles (blanched)
- 2 pcs onion
- 3 cloves garlic
- 30 g butter
- 2 tbsp flour
- 200 g yoghurt
- 2 pcs eggs
- to taste salt

- 1Blanch nettles 2 minutes; drain and chop.
- 2Sweat onion and garlic in butter.
- 3Add flour; stir and cook 1 minute.
- 4Add 1 litre water and the chopped nettles.
- 5Simmer 15 minutes.
- 6Whisk eggs with yoghurt, temper and stir into the soup.
- 7Serve hot.
