- 6 large eggs
- 2 tbsp butter
- 2 tbsp milk or cream
- 0.25 tsp salt
- 0.125 tsp black pepper
- 1 tbsp fresh chives (chopped)
Steps
- 1Crack eggs into a bowl. Add milk, salt, and pepper. Whisk until uniform.
- 2Melt butter in a non-stick skillet over medium-low heat.
- 3Pour in egg mixture. Let sit 20 seconds until edges begin to set.
- 4Gently push eggs from edge to centre with a spatula, forming soft curds.
- 5Continue folding every 15-20 seconds. Remove from heat while eggs are still slightly wet — they will finish cooking from residual heat.
- 6Serve immediately on toast, garnished with chives.
