Velvety smooth tomato soup with a hint of basil. Simple, warming, and perfect with a grilled cheese sandwich.

Ingredients

Serves:4
  • 800 g canned whole tomatoes
  • 1 medium onion (diced)
  • 3 cloves garlic cloves (minced)
  • 2 cups vegetable broth
  • 0.25 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.25 tsp black pepper

Steps

  1. 1Heat butter and olive oil in a large pot over medium heat.
  2. 2Sauté onion until translucent (4-5 min). Add garlic and cook 30 seconds.
  3. 3Add canned tomatoes (with juices), vegetable broth, sugar, basil, salt, and pepper.
  4. 4Bring to a boil, then reduce heat and simmer 20 minutes.
  5. 5Use an immersion blender to purée until smooth (or blend in batches).
  6. 6Stir in heavy cream and heat through.
  7. 7Serve hot with crusty bread or grilled cheese.
