Soft flourless cookies sweetened with erythritol and made with just 5 ingredients. Crispy on the outside, chewy in the middle and ready in 15 minutes.

  • 250 g crunchy peanut butter (100% peanuts)
  • 100 g granulated sweetener
  • 1 egg
  • 1 pinch sea salt
  • 0.5 tsp cinnamon (optional)

    Preheat oven to 180C/350F. Line a baking sheet with parchment paper.

    Mix all ingredients together in a bowl with a fork until well combined.

    Roll into small balls of about 15g each and place on the lined baking sheet.

    Wet a fork and press a criss-cross pattern on each cookie.

    Bake 8 to 10 minutes until the edges are firm. Cool completely before eating — they firm up as they cool.
