Velvety smooth Alfredo-style sauce made with cashews and nutritional yeast instead of cream and Parmesan. Pairs perfectly with fettuccine or any pasta.

- 1.5 cups raw cashews, soaked 2 hours
- 480 ml vegetable broth
- 1/4 cup nutritional yeast
- 3 garlic cloves
- 2 tbsp lemon juice
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp white wine (optional)

- 1Drain soaked cashews and add to a high-speed blender.
- 2Add vegetable broth, nutritional yeast, garlic, lemon juice, onion powder, salt, and pepper. Add white wine if using.
- 3Blend on high speed for 2 to 3 minutes until completely smooth and silky.
- 4Pour sauce into a saucepan over medium-low heat. Stir frequently until heated through, about 5 minutes.
- 5Taste and adjust salt and lemon juice. Toss with cooked pasta and serve immediately.
