A classic Caesar salad with a bold, creamy dressing made entirely without dairy or anchovies. Crispy romaine, crunchy croutons, and punchy flavour.

- 2 heads romaine lettuce
- 1/2 cup raw cashews, soaked
- 3 tbsp lemon juice
- 1 tbsp Dijon mustard
- 2 garlic cloves
- 2 tbsp capers
- 3 tbsp nutritional yeast
- 3 tbsp olive oil
- 60 ml water
- 1 to taste salt and black pepper
- 2 slices sourdough bread, cubed

- 1Make croutons: toss bread cubes with 1 tbsp olive oil and salt. Spread on a baking sheet and bake at 200C for 10 to 12 minutes until golden. Set aside.
- 2Make dressing: blend soaked cashews, lemon juice, Dijon mustard, garlic, capers, nutritional yeast, remaining olive oil, and water until completely smooth. Season generously with salt and pepper.
- 3Chop romaine lettuce into bite-sized pieces and dry thoroughly.
- 4Toss lettuce with dressing until well coated.
- 5Divide onto plates, top with croutons, and finish with a grind of black pepper.
