Creamy, comforting macaroni and cheese made entirely without dairy, using cashew cream and nutritional yeast for a rich, cheesy flavour.

- 350 g elbow pasta
- 1 cup raw cashews, soaked 2 hours
- 360 ml vegetable broth
- 4 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp turmeric
- 2 tbsp lemon juice
- 1 tsp salt

- 1Cook pasta according to package directions, drain, and set aside.
- 2Drain soaked cashews and blend with vegetable broth, nutritional yeast, garlic powder, onion powder, turmeric, and lemon juice until completely smooth.
- 3Return drained pasta to the pot over low heat. Pour in the cashew sauce and stir to coat evenly.
- 4Heat for 2 to 3 minutes until warmed through. Season with salt and serve immediately.
