Dairy-Free Mac and Cheese

Creamy, comforting macaroni and cheese made entirely without dairy, using cashew cream and nutritional yeast for a rich, cheesy flavour.

Ingredients

Serves:4
  • 350 g elbow pasta
  • 1 cup raw cashews, soaked 2 hours
  • 360 ml vegetable broth
  • 4 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp turmeric
  • 2 tbsp lemon juice
  • 1 tsp salt

Steps

  1. 1Cook pasta according to package directions, drain, and set aside.
  2. 2Drain soaked cashews and blend with vegetable broth, nutritional yeast, garlic powder, onion powder, turmeric, and lemon juice until completely smooth.
  3. 3Return drained pasta to the pot over low heat. Pour in the cashew sauce and stir to coat evenly.
  4. 4Heat for 2 to 3 minutes until warmed through. Season with salt and serve immediately.
