Incredibly creamy mashed potatoes made without a drop of butter or cream. Roasted garlic and olive oil create a deeply satisfying side dish.

- 1 kg Yukon Gold potatoes
- 4 garlic cloves
- 4 tbsp olive oil
- 120 ml oat milk, warmed
- 1.5 tsp salt
- 1/4 tsp white pepper
- 2 tbsp fresh chives, chopped

- 1Peel and cube potatoes into 3 cm pieces. Place in a large pot, cover with cold salted water, and bring to a boil.
- 2Add garlic cloves to the pot. Cook for 15 to 20 minutes until potatoes are completely tender.
- 3Drain well and return potatoes and garlic to the pot. Allow steam to escape for 2 minutes.
- 4Mash with a potato masher, then stir in olive oil and warm oat milk until smooth and creamy.
- 5Season with salt and white pepper. Transfer to a serving bowl and garnish with chives.
