Tangy, herby ranch dressing without a trace of dairy. Made with a cashew base and fresh herbs — the perfect dip for veggies and salads.

Ingredients

Serves:8
  • 3/4 cup raw cashews, soaked 2 hours
  • 120 ml water
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 2 tbsp chives, finely chopped
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Steps

  1. 1Drain soaked cashews and blend with water, apple cider vinegar, and lemon juice until completely smooth.
  2. 2Add garlic powder, onion powder, dried dill, dried parsley, salt, and pepper. Blend again briefly.
  3. 3Stir in the fresh chives. Taste and adjust seasoning.
  4. 4Refrigerate for at least 30 minutes before serving to allow flavours to develop.
  5. 5Serve as a dip with crudites, drizzle over salads, or use as a burger sauce. Keeps refrigerated for up to 1 week.
