Tangy, herby ranch dressing without a trace of dairy. Made with a cashew base and fresh herbs — the perfect dip for veggies and salads.

- 3/4 cup raw cashews, soaked 2 hours
- 120 ml water
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried dill
- 1 tsp dried parsley
- 2 tbsp chives, finely chopped
- 3/4 tsp salt
- 1/4 tsp black pepper

- 1Drain soaked cashews and blend with water, apple cider vinegar, and lemon juice until completely smooth.
- 2Add garlic powder, onion powder, dried dill, dried parsley, salt, and pepper. Blend again briefly.
- 3Stir in the fresh chives. Taste and adjust seasoning.
- 4Refrigerate for at least 30 minutes before serving to allow flavours to develop.
- 5Serve as a dip with crudites, drizzle over salads, or use as a burger sauce. Keeps refrigerated for up to 1 week.
