The classic Greek cucumber dip made dairy-free using coconut yogurt. Just as cool and refreshing, with cucumber, garlic, and dill.

Ingredients

Serves:8
  • 400 ml plain coconut yogurt
  • 1 medium cucumber
  • 2 garlic cloves, minced
  • 3 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Steps

  1. 1Grate the cucumber and squeeze out as much water as possible using a clean cloth or paper towels.
  2. 2Combine coconut yogurt, grated cucumber, minced garlic, dill, lemon juice, and olive oil in a bowl.
  3. 3Mix well and season with salt and pepper.
  4. 4Cover and refrigerate for at least 1 hour to let the flavours meld.
  5. 5Serve drizzled with olive oil as a dip with pita, crudites, or alongside grilled meats.
