Fudgy Vegan Brownies

Intensely chocolatey and fudgy brownies made with coconut oil and flax eggs. Completely dairy-free and utterly irresistible.

Ingredients

  • 1/2 cup coconut oil
  • 200 g dairy-free dark chocolate
  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 200 g caster sugar
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp salt

Steps

  1. 1Preheat oven to 180C and line a 20 cm square baking pan with parchment paper.
  2. 2Make flax eggs: mix ground flaxseed with 6 tbsp water and set aside for 5 minutes to gel.
  3. 3Melt coconut oil and dark chocolate together in a heatproof bowl over simmering water, stirring until smooth. Cool slightly.
  4. 4Whisk sugar and flax eggs into the chocolate mixture. Add vanilla extract.
  5. 5Fold in flour, cocoa powder, and salt until just combined.
  6. 6Pour batter into prepared pan. Bake for 20 to 25 minutes until the top is set but the centre is still slightly soft.
  7. 7Cool completely in the pan before cutting into squares.
