A luscious no-bake cheesecake with a date-nut crust and a silky cashew filling. Entirely dairy-free and perfect for any celebration.

Ingredients

  • 12 Medjool dates, pitted
  • 1 cup walnuts
  • 2 cups raw cashews, soaked overnight
  • 1/3 cup coconut cream
  • 1/3 cup maple syrup
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • 3 tbsp coconut oil, melted
  • 1 pinch pinch of salt

Steps

  1. 1Process dates and walnuts in a food processor until sticky crumbles form. Press firmly into the base of a 20 cm springform pan. Freeze for 15 minutes.
  2. 2Drain soaked cashews and blend with coconut cream, maple syrup, lemon juice, vanilla, melted coconut oil, and salt until completely smooth.
  3. 3Pour filling over the crust and smooth the top.
  4. 4Freeze for at least 4 hours or overnight until firm.
  5. 5Remove from the freezer 15 minutes before serving. Top with fresh berries or fruit compote.
