Steps
Steps
- 1Halve the tomatoes, squeeze out the seeds and juice, and dice the flesh finely. Seeding them is what keeps ezme thick rather than watery.
- 2Seed the green and red peppers and the chilli and dice them as small as the tomatoes. Chop the onion and garlic finely and strip the parsley leaves from the stalks.
- 3Rub the onion with the sumac and a pinch of salt for a minute to soften its bite.
- 4Pile the tomatoes, peppers, chilli, onion, garlic and parsley on a large board and chop them together with a heavy knife for 4–5 minutes, until almost a coarse paste. A food processor turns them to soup; the knife is the technique.
- 5Transfer to a bowl and stir in the pepper paste, pomegranate molasses, olive oil, lemon juice and pul biber, then crumble in the dried mint between your palms.
- 6Season with salt, leave for 15 minutes for the flavours to meld, then taste again: it should be hot, sour and faintly sweet. Eat it the same day, at room temperature.
