A uniquely Bulgarian Easter dish – lamb offal mixed with rice and dill, wrapped in caul fat and roasted to a crisp golden finish.

  • 800 g lamb offal (liver, heart, lungs)
  • 100 g rice
  • 2 pcs onion
  • 1 bunch dill
  • 50 g butter
  • 2 pcs eggs
  • 1 pc caul fat (lamb net)
  • to taste salt and pepper

    Dice offal finely and sear in butter.

    Add chopped onion and rice; sauté 5 minutes.

    Remove from heat; mix in dill and beaten eggs.

    Lay caul fat in a roasting tin; spoon filling in the centre.

    Wrap tightly with the caul fat.

    Roast at 180°C for 60–70 minutes until golden brown.
