Steps
Steps
- 1Soak the bread in the milk for 5 minutes, then mash it to a paste.
- 2Add the pork, beef, egg, 1 garlic clove, 2 tbsp of the parsley, 1 tsp of salt and some pepper, mix lightly with your hands and roll into about 24 balls the size of a walnut.
- 3Roll the meatballs lightly in the flour. Heat 3 tbsp of the oil in a wide pan over medium-high heat and brown them in batches for 5 minutes. Set aside.
- 4Add the remaining oil and the onion and cook over medium heat for 8 minutes until soft, then add the rest of the garlic and the paprika for 30 seconds.
- 5Pour in the wine and let it bubble for 2 minutes, then add the tomatoes, season and simmer for 10 minutes.
- 6Return the meatballs, cover and simmer gently for 20 minutes, until cooked through; the flour on them thickens the sauce.
- 7Scatter with the remaining parsley and serve hot, straight from the pan.
