  • 100 g unsalted butter
  • 120 g Parmesan cheese
  • 120 ml pasta cooking water
  • 1 tsp black pepper
  • 0.5 tsp salt

    Finely grate the Parmesan and bring it to room temperature.

    Cook pasta until al dente and reserve 1 cup of the starchy cooking water before draining.

    In the warm pasta pot (off heat), melt butter gently.

    Add drained pasta and half the pasta water. Toss vigorously for 1 minute.

    Add Parmesan in three batches, tossing and adding more pasta water as needed to create a glossy emulsified sauce. Season with salt and plenty of black pepper.
