- 120 g Parmesan cheese
- 120 ml pasta cooking water
- 1 tsp black pepper

- 1Finely grate the Parmesan and bring it to room temperature.
- 2Cook pasta until al dente and reserve 1 cup of the starchy cooking water before draining.
- 3In the warm pasta pot (off heat), melt butter gently.
- 4Add drained pasta and half the pasta water. Toss vigorously for 1 minute.
- 5Add Parmesan in three batches, tossing and adding more pasta water as needed to create a glossy emulsified sauce. Season with salt and plenty of black pepper.
