Steps
Steps
- 1Heat the oil in a wide frying pan with a lid over medium heat and fry the cumin seeds for 30 seconds until they darken a shade.
- 2Add the onion and fry for 6–8 minutes until golden, then the ginger, garlic and chilli for 1 minute.
- 3Add the potatoes and fry for 5 minutes, turning them, until they take on some colour.
- 4Add the cauliflower, turmeric, ground coriander, chilli powder and salt and toss gently until everything is coated yellow.
- 5Add the tomato and water, cover tightly and cook on low heat for 15–20 minutes, turning gently once or twice, until the potatoes are tender. The vegetables cook in their own steam, so add no more water or they turn mushy.
- 6Uncover, raise the heat and fry for 3–4 minutes until any liquid has gone and the edges brown. Sprinkle with the garam masala and coriander and serve.
