Apple Crumble

Britain's wartime pudding, born of rationing — tart apples softened with sugar and cinnamon under a buttery, golden crumble of flour, oats and demerara. Rubbing the butter in roughly, leaving lumps, gives a crisp, craggy top.

Steps
Steps
- 1Heat the oven to 190°C (170°C fan).
- 2Toss the apples with the caster sugar, cinnamon and lemon juice and spread them in a 2 litre baking dish.
- 3Rub the butter into the flour and salt with your fingertips until the mixture looks like rough breadcrumbs with some pea-sized lumps.
- 4Stir in the oats and demerara sugar.
- 5Scatter the crumble loosely over the apples without pressing it down; a packed topping turns stodgy.
- 6Bake for 40–45 minutes, until the top is golden and crisp and the fruit bubbles up at the edges.
- 7Rest for 10 minutes and serve warm with the hot custard.
