Steps

  1. 1
Stir the salt into the warm water in a bowl, then add the maize flour gradually, mixing with your hand until there are no lumps. Rest for 5 minutes: the flour keeps absorbing water.
  2. 2
Knead for 1–2 minutes with 1 tsp of the oil. The dough should be soft and smooth and not crack at the edges when pressed; if it does, work in a splash more water.
  3. 3
Divide into 8 balls and flatten each between your palms into a disc about 1.5 cm thick and 9 cm wide, smoothing the edges with a fingertip.
  4. 4
Heat a heavy frying pan or griddle over medium heat, brush it with oil and cook the arepas for 6–7 minutes a side, until a pale golden crust forms and they sound hollow when tapped.
  5. 5
Meanwhile, warm the beans with the cumin and a pinch of salt and mash them lightly.
  6. 6
Split each hot arepa along the side like a pitta, leaving a hinge, spread the inside with butter and fill with beans, cheese and avocado. Serve hot.
