Steps
Steps
- 1Chill the yoghurt and water well beforehand; ayran is only refreshing when ice-cold.
- 2Put the yoghurt and salt in a jug and whisk until smooth, with no lumps.
- 3Pour in the cold water gradually, whisking all the time, so the yoghurt loosens evenly.
- 4Whisk hard for 1 minute, or blend for 20 seconds with a stick blender, until a thick froth forms on top.
- 5Taste: it should be lightly salty and fresh rather than sour.
- 6Put the ice cubes into glasses, pour over the ayran with its froth and serve at once.
