Steps

  1. 1
Soak the salt cod in cold water in the fridge for 24–48 hours, changing the water three or four times a day, until a flake tastes pleasantly seasoned rather than salty.
  2. 2
Drain, remove the skin and bones and shred the fish finely with your fingers.
  3. 3
Rinse the potato matchsticks and dry them thoroughly in a tea towel. Heat the sunflower oil to 170°C and fry them in batches for 3–4 minutes, until golden and crisp; drain on kitchen paper.
  4. 4
Heat the olive oil in a large frying pan over medium heat and cook the onions, garlic and bay for 10 minutes until soft and golden. Remove the bay leaf.
  5. 5
Add the cod and cook for 3–4 minutes, stirring, until heated through.
  6. 6
Fold in the potatoes, lower the heat and pour in the eggs, lightly beaten with pepper.
  7. 7
Stir gently for 1–2 minutes and take the pan off the heat while the eggs are still creamy — they should coat everything, not set into an omelette.
  8. 8
Stir in most of the parsley, top with the olives and the rest of the parsley and serve at once.
