Steps
Steps
- 1Halve the garlic cloves and pull out any green shoots, which taste harsh. Simmer them in the milk in a small pan over low heat for 20 minutes, until very soft; the milk takes away the raw edge. Drain and discard the milk.
- 2Mash the garlic to a paste with a fork in a small heavy pan — a terracotta pot is traditional — then add the olive oil and the anchovies.
- 3Cook over the lowest possible heat for 10–15 minutes, stirring and pressing with a wooden spoon, until the anchovies dissolve completely into the oil. It must never fry or brown, or the garlic turns bitter.
- 4Stir in the butter until it melts and the sauce turns creamy.
- 5Cut the vegetables into sticks, wedges and florets that are easy to hold and arrange them on a platter.
- 6Bring the pan to the table over a candle or spirit burner, so it stays hot but never boils, and let everyone dip the vegetables.
