Steps
Steps
- 1Trim the okra by paring the cap around the stalk thinly with a small knife, without cutting into the pod — cut pods leak their sticky juice.
- 2Toss the okra in a bowl with the vinegar and leave for 30 minutes, then rinse and drain.
- 3Heat the oil in a wide pot over medium heat and soften the onion and pepper for 8 minutes.
- 4Add the grated tomatoes and cook for 5 minutes, then take off the heat and stir in the paprika.
- 5Add the okra, hot water, salt and pepper, cover and simmer on low heat for 25–30 minutes, shaking the pot instead of stirring so the pods stay whole.
- 6When the okra is tender and the sauce has thickened, scatter with the parsley.
- 7Leave to stand for 10 minutes and serve warm.
