Steps
Steps
- 1Melt 30 g of the butter in a wide pan over medium-low heat, add the onions with a pinch of salt and cook gently for 25 minutes, stirring now and then and adding the sugar halfway, until soft and deep golden. Slow cooking makes the gravy sweet.
- 2Meanwhile, peel the potatoes, cut them into even chunks and boil in salted water for 15–20 minutes until soft.
- 3Heat the oil in a frying pan over medium-low heat and cook the sausages slowly for 15–20 minutes, turning often, until evenly browned and cooked through. Low heat keeps them from splitting.
- 4Sprinkle the flour over the onions and stir for 1 minute, then gradually stir in the stock, Worcestershire sauce and thyme. Simmer for 5–8 minutes until glossy and thickened, and season.
- 5Drain the potatoes, let them steam dry for 2 minutes and mash with the remaining butter and the warmed milk until smooth; season.
- 6Spoon the mash onto warm plates, lean two sausages on each and pour over the onion gravy.
