Steps

  1. 1
If the sauerkraut is very salty, rinse it; then squeeze it hard to remove the juice and chop it finely.
  2. 2
Heat 80 ml of the oil in a wide pan over medium heat and soften the onion for 5 minutes. Add the sauerkraut and cook, stirring, for 15–20 minutes until soft, dry and lightly golden.
  3. 3
Take off the heat, stir in the paprika, pepper and walnuts and leave the filling to cool completely — hot filling makes the filo soggy.
  4. 4
Heat the oven to 200°C/400°F and brush a 30 × 40 cm baking tray with oil.
  5. 5
Lay two filo sheets in the tray, brushing each with oil, and scatter over a thin layer of filling. Repeat, two oiled sheets and a layer of filling at a time, until the filling is used up, and finish with three oiled sheets.
  6. 6
Cut the banitsa into squares right through to the bottom with a sharp knife and sprinkle the sparkling water evenly over the top.
  7. 7
Bake for 35–40 minutes, until the top is crisp and deep golden.
  8. 8
Cover with a clean towel for 10 minutes and serve warm or cold.
