Apple Banitsa
Sweet banitsa from Bulgarian home kitchens — filo sheets rolled around grated apple, walnuts, sugar and cinnamon, coiled into a round tin and baked crisp, made with oil so it suits the fasts. Squeezing the grated apple keeps the bottom from going soggy.

Steps
Steps
- 1Heat the oven to 180°C and brush a 28 cm round tin with a little of the oil.
- 2Peel and coarsely grate the apples, toss them with the lemon juice and squeeze out the juice by the handful.
- 3Mix the apples with the sugar, walnuts, cinnamon and semolina; the semolina soaks up the juice the apples release in the oven.
- 4Lay one filo sheet on the worktop, sprinkle it with oil, lay a second sheet on top and sprinkle again.
- 5Spread a strip of filling along a long edge and roll the filo loosely into a tube.
- 6Coil the first tube in the centre of the tin and wrap the next ones around it to make a spiral that fills the tin.
- 7Brush the top with the remaining oil and bake for 40–45 minutes, until golden and crisp.
- 8Leave in the tin for 15 minutes, dust with icing sugar and cut into wedges; serve warm or at room temperature.
